Instructions:
1. Preheat a cast iron pan over medium-high heat.
2. Pat the striploin steak dry with paper towels to remove excess moisture.
3. Season both sides of the steak generously with salt and pepper.
4. Add a drizzle of avocado oil to the hot cast iron pan.
5. Carefully place the seasoned steak into the pan, allowing it to form a crust undisturbed for about 4-5 minutes per side for medium-rare, adjusting the time based on your desired doneness and the thickness of the steak (about 8-10 minutes per inch of thickness).
6. Flip the steak using tongs and sear the other side until it develops a similar crust.
7. Once the steak is cooked to your liking, remove it from the pan and let it rest on a cutting board for about 5-10 minutes to allow the juices to redistribute.
8. Slice the steak against the grain for maximum tenderness and serve hot.
