Recipe of the week - Cream of Chicken Soup 👨‍🍳

•1/4 cup butter
•1/4 cup all-purpose flour
•1/2 cup diced onion
•1/2 cup diced celery
•1/2 cup diced carrots
•2 cloves garlic, minced
•4 cups chicken broth
•2 cups cooked and shredded chicken
•1 cup half-and-half or heavy cream
•Salt and pepper to taste
•1 teaspoon dried thyme
•1/2 teaspoon dried rosemary
•1/2 teaspoon dried oregano
•Chopped fresh parsley for garnish


1. In a large pot, melt the butter over medium heat. Add diced onion, celery, carrots, and garlic. Cook until vegetables are softened, about 5-7 minutes.
2. Sprinkle flour over the vegetables and stir well to coat. Cook for an additional 2-3 minutes to remove the raw flour taste.
Slowly whisk in the chicken broth, ensuring no lumps form. Bring the mixture to a simmer and let it cook for 10-12 minutes, allowing it to thicken.
3. Add shredded chicken, half-and-half (or heavy cream), thyme, rosemary, oregano, salt, and pepper. Simmer for an additional 10-15 minutes, stirring occasionally.
4. Taste and adjust seasoning as needed. If the soup is too thick, you can add more broth or cream to reach your desired consistency.
5. Serve hot, garnished with chopped fresh parsley.
