Ingredients:
- 1 lb ground chicken
- 2 eggs
- 1 onion, finely chopped
- 1/2 cup milk
- 1/2 cup breadcrumbs
- salt and pepper, to taste
- 2 tablespoons ketchup
- 2 tablespoons mustard
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/2 cup grated Parmesan cheese
Instructions:
1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
2. In a small bowl, combine the breadcrumbs and milk. Mix well and let it sit for a few minutes until the breadcrumbs absorb the milk. In a separate large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, salt, pepper, and grated Parmesan cheese.
3. Mix everything together thoroughly until well combined. Make sure all ingredients are evenly distributed throughout the mixture.
4. Transfer the chicken mixture into the prepared loaf pan. Press the mixture down evenly into the pan, smoothing the top with the back of a spoon or your hands.
5. Place the loaf pan in the preheated oven and bake for about 60 minutes.
6. In a small bowl, mix together the ketchup, mustard, and brown sugar to make the glaze.
7. After the meatloaf has baked for 30 minutes, remove it from the oven and carefully spread the glaze evenly over the top of the meatloaf.
8. Return the meatloaf to the oven and continue baking for an additional 30 minutes, or until the internal temperature reaches 165°F and the meatloaf is cooked through.
9. Let the meatloaf rest for 5-10 minutes before slicing and serving. This allows the juices to redistribute and makes it easier to slice.
10. Slice the meatloaf and serve hot with mashed potatoes, steamed vegetables, or your favorite sides.
