Ingredients:
* 4 boneless, skinless chicken breasts
* 1 cup all-purpose flour
* 2 eggs
* 1 cup breadcrumbs
* 1/2 cup grated Parmesan cheese
* Salt and pepper, to taste
* Oil, for frying
Instructions:
1. Slice each chicken breast horizontally into three thinner cutlets. You should end up with 12 pieces of chicken in total.
2. Prepare three shallow bowls. In the first bowl, place the flour seasoned with salt, pepper. In the second bowl, beat the eggs. In the third bowl, combine the breadcrumbs and grated Parmesan cheese.
3. Dredge each piece of chicken in the seasoned flour, shaking off any excess. Dip it into the beaten eggs, ensuring it is evenly coated. Press the chicken into the breadcrumb mixture, making sure it is well coated on both sides. Press gently to adhere the breadcrumbs.
4. In a large skillet, heat about 1/4 inch of oil over medium-high heat until hot but not smoking. Carefully place the breaded chicken cutlets in the hot oil. Depending on the size of your skillet, you may need to fry them in batches to avoid overcrowding. Cook each cutlet for about 3-4 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
5. Once cooked, transfer the chicken cutlets to a plate lined with paper towels to drain excess oil. Serve hot with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh salad.
