Recipe of the week - Spinach and Feta Stuffed Chicken Breast 👨🍳
Ingredients:
•4 boneless, skinless chicken breasts
•2 cups fresh spinach leaves
•½ cup crumbled feta cheese
•2 cloves garlic, minced
•1 teaspoon dried oregano
•Salt and pepper to taste
•2 tablespoons olive oil
Instructions:
1. Preheat the oven to 375°F (190°C). Using a sharp knife, carefully cut a pocket into each chicken breast.
2. In a bowl, mix together the spinach, feta cheese, minced garlic, dried oregano, salt, and pepper.
3. Stuff each chicken breast with the spinach and feta mixture, securing with toothpicks if needed.
4. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side, until browned.
5. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
6. Remove the toothpicks before serving. Serve the spinach and feta stuffed chicken breasts with your choice of sides.
