Ingredients:
* 4 large sweet potatoes, peeled and thinly sliced
* 1 cup grated Parmesan cheese
* 1 lb ground beef
* 2 tablespoons beef tallow (or oil)
* 2 large carrots, diced
* 2 celery stalks, diced
* 1 cup tomato sauce
* Salt and pepper to taste
Instructions:
1. Heat the beef tallow in a large skillet over medium heat.
2. Add the diced carrots and celery to the pan. Cook until the vegetables are softened.
3. Add the ground beef to the skillet, Season with salt and pepper. Cook until browned, breaking it up with a spoon as it cooks.
4. Stir in the tomato sauce and cook for another 2-3 minutes, allowing the flavors to combine. Remove from heat.
5. Preheat your oven to 375°F (190°C).
6. Arrange a layer of thinly sliced sweet potatoes on the bottom of the oven-proof dish.
7. Sprinkle a layer of grated Parmesan cheese over the sweet potatoes.
8. Spread a layer of the beef mixture over the cheese.
9. Repeat the layers, until all ingredients are used. Finish with a layer of Parmesan cheese on top.
10. Bake for 45 minutes until the sweet potatoes are tender and the top is golden brown.
