Ingredients:
- spaghetti
- broccoli
- onion
- garlic
- chicken breast
- tomato sauce
- olive oil
- salt and pepper to taste
- grated Parmesan cheese for serving (optional)
Instruction:
1. Bring a large pot of salted water to a boil. Add the spaghetti to the boiling water and cook according to package instructions until al dente. Once cooked, drain the spaghetti and set it aside.
2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the whole chicken breast with salt and pepper. Place the chicken breast in the skillet and cook for about 6-8 minutes on each side until it’s cooked through and golden brown. Remove the chicken breast from the skillet and let it rest for a few minutes. Then, slice it thinly.
3. In the same skillet used for cooking the chicken, add another tablespoon of olive oil if needed. Sauté the diced onion and minced garlic until the onion is soft and translucent. Add the broccoli florets to the skillet and cook for about 5-7 minutes until they are tender. Pour in the tomato sauce and stir to combine. Let the sauce simmer for a few minutes.
4. Add the cooked spaghetti to the skillet with the tomato sauce, onion, garlic, and broccoli. Toss everything together until the spaghetti is evenly coated with the sauce and vegetables. Gently fold in the sliced chicken breast until it is incorporated into the pasta and sauce.
5. Garnish with grated Parmesan cheese if desired.
