*2 to 3 pounds beef tenderloin
*2 tablespoons olive oil
*3 cloves garlic, minced
*1 tablespoon fresh rosemary, chopped
*1 tablespoon fresh thyme, chopped
*Salt and pepper to taste


1. Preheat your oven to 425Β°F (220Β°C).
2. Pat the beef tenderloin dry with paper towels. This helps achieve a nice sear.
3. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a flavorful rub.
4. Rub the mixture evenly over the beef tenderloin, coating it thoroughly.
5. Heat a large oven-safe skillet over medium-high heat. Add a bit of olive oil if needed. Sear the beef on all sides until browned, about 2-3 minutes per side.
6. Transfer the skillet to the preheated oven and roast the beef for approximately 20-25 minutes for medium-rare, or adjust the time based on your preferred doneness.
7. Use a meat thermometer to check the internal temperature. For medium-rare, aim for 135Β°F (57Β°C).
8. Once cooked to your liking, remove the beef from the oven, cover it loosely with foil, and let it rest for 10 minutes. This allows the juices to redistribute.
9. Slice the beef tenderloin into even portions and serve with your favorite side dishes.
