Ingredients:
- 227 g penne pasta
- 1/2 onion, finely chopped
- 1 clove garlic, minced
- 2 strips beef bacon, chopped
- 1 1/2 cups tomato sauce
- 2 tablespoons grated cheese (Parmesan or Pecorino)
- 2 tablespoons chopped fresh parsley
- Extra cheese for serving
Instructions:
1. Heat a pan over medium heat. Add the chopped beef bacon and cook until crispy and browned.
2. In the same pan add the chopped onion. Cook for about 1 minute until softened. Add the minced garlic and cook for an additional 30 seconds, stirring frequently.
3. Pour in the tomato sauce and bring to a simmer. Let it cook for a few minutes to heat through and meld the flavors.
4. While the sauce is heating, cook the penne in a large pot of salted boiling water according to package instructions until al dente. Drain the pasta and add it to the pan with the tomato sauce.
5. Add grated cheese and chopped parsley. Toss everything together until well combined and the cheese is melted.
6. Divide the penne amatriciana between plates. Top with extra cheese before serving.
