Instructions:
1. Preheat your grill to high heat, around 450-500°F (230-260°C).
2. Pat the flank steak dry with paper towels. This helps to get a nice sear on the grill.
3. Season generously with salt and black pepper.
4. Place the steak on the hot grill. Cook for 4-6 minutes per side for medium-rare, or longer if you prefer a different level of doneness. Avoid moving the steak around too much to get a good sear.
5. Use tongs to flip the steak, and if you have a meat thermometer, aim for an internal temperature of 130-135°F (54-57°C) for medium-rare.
6. Once cooked to your liking, remove the steak from the grill and let it rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute throughout the meat, making it more tender and flavorful.
7.Slice the steak thinly against the grain to ensure maximum tenderness. Cutting against the grain breaks up the muscle fibers, making each bite more enjoyable.
