👨🍳 Recipe of the week - Cheesy Bacon and Potato Casserole
Ingredients:
• 6 cups potatoes, peeled and diced
• 1/2 cup sour cream
• 1/2 cup mayonnaise
• 1/2 cup shredded cheddar cheese
• 6 slices bacon, cooked and crumbled
• salt and black pepper, to taste
• 1/4 cup chopped fresh chives
▫️Preheat oven to 350°F and grease a 9x13 inch baking dish.
▫️Cook diced potatoes in boiling water for 10-15 minutes until tender. Drain and let cool.
▫️In a large bowl, mix together sour cream, mayonnaise, shredded cheddar cheese, crumbled bacon, salt, and black pepper.
▫️Add cooked and cooled potatoes to the mixture and stir to coat.
▫️Pour the mixture into the prepared baking dish and bake for 30-35 minutes until bubbly and golden brown.
▫️Garnish with chopped fresh chives and serve hot.
