Recipe of the week - Bolognese πŸ‘¨β€πŸ³

Ingredients:
* ground beef
* olive oil
* onion, finely chopped
* garlic, minced
* carrots, chopped
* celery stalks, chopped
* tomato
* salt and pepper to taste
* spaghetti or your favorite pasta
* mascarpone cheese
* grated Parmesan cheese, for serving

Instructions:
1. In a large skillet, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened.
2. In a separate pan, heat olive oil over medium-high heat. Add ground beef, salt and pepper and cook until browned, breaking it up with a spoon as it cooks.
3. Once the beef is browned, transfer it to the skillet with the cooked vegetables.
4. Stir in tomato. Bring to a simmer.
5. Reduce heat to low and let the sauce simmer for about 30 minutes, stirring occasionally.
6. While the sauce is simmering, cook the pasta according to package instructions until al dente. Drain and set aside.
7. Once the sauce has thickened, remove from heat. Stir in mascarpone cheese until well combined.
8. Add the cooked pasta to the sauce and toss until evenly coated.
9. Serve hot, garnished with grated Parmesan cheese.
