Ingredients:
* ground beef
* olive oil
* onion, finely chopped
* garlic, minced
* carrots, chopped
* celery stalks, chopped
* tomato
* salt and pepper to taste
* spaghetti or your favorite pasta
* mascarpone cheese
* grated Parmesan cheese, for serving
Instructions:
1. In a large skillet, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened.β¨2. In a separate pan, heat olive oil over medium-high heat. Add ground beef, salt and pepper and cook until browned, breaking it up with a spoon as it cooks.β¨3. Once the beef is browned, transfer it to the skillet with the cooked vegetables.β¨4. Stir in tomato. Bring to a simmer.β¨5. Reduce heat to low and let the sauce simmer for about 30 minutes, stirring occasionally.β¨6. While the sauce is simmering, cook the pasta according to package instructions until al dente. Drain and set aside.β¨7. Once the sauce has thickened, remove from heat. Stir in mascarpone cheese until well combined.β¨8. Add the cooked pasta to the sauce and toss until evenly coated.β¨9. Serve hot, garnished with grated Parmesan cheese.Β β¨
