Recipe of the week - Chicken Alfredo 👨‍🍳

* 1 pound (450g) fettuccine pasta
* 2 tablespoons olive oil
* 4 boneless, skinless chicken breasts, cut into bite-sized pieces
* Salt and pepper to taste
* 4 cloves garlic, minced
* 1 cup (240ml) chicken broth
* 1 cup (240ml) heavy cream
* 1 cup (100g) grated Parmesan cheese
* 1/2 cup (115g) unsalted butter
* Fresh parsley, chopped (for garnish)

1. Cook the fettuccine pasta according to the package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium-high heat. Season chicken pieces with salt and pepper, then add them to the skillet. Cook until browned and cooked through. Remove chicken from the skillet and set aside.
3. In the same skillet, add minced garlic and sauté until fragrant.
4. Pour in chicken broth, scraping the bottom of the skillet to release any browned bits. Allow it to simmer for a couple of minutes.
5. Reduce the heat to medium-low and stir in heavy cream, Parmesan cheese, and butter. Keep stirring until the cheese and butter are melted, creating a creamy sauce.
6. Add the cooked chicken and the fettuccine pasta into the skillet.
7. Garnish with chopped fresh parsley.
